Today i was looking for an easy low carb recipe, when i came upon this beef and vegetable recipe; that can be made in a skillet. The ingredients include one onion cut in quarters of bite size pieces, one medium size green bell pepper, cut in strips. Also one red bell pepper, cut in strips, one zucchini and one squash cut in bite size pieces one inch thick. Two pounds of 85/15 ground beef, two 10 oz. cans of RoTel tomatoes, one hot and one original. The preference is your choice. Minced garlic, 2 tsp of chili powder, 2 teaspoons of cumin, a teaspoon each of salt and pepper, and 1/2 teaspoon of red chili flakes give you the seasoning. Saute onion and peppers in a skillet for about five minutes, add minced garlic to the skillet, saute for another two minutes and remove the contents to a plate. Add the ground beef to the skillet and allow it to brown, and remove the excess oil. Add the seasoning, chili powder, cumin, red pepper flakes, salt and pepper. Add RoTel tomatoes and stir the contents. Place the lid on the skillet and simmer for about ten minutes on medium low. Add zucchini and squash to the mix. Add the peppers and onion to the mix, place the lid on and let simmer for ten minutes. Now you have a delicious festive low carb beef and vegetable skillet meal. Check it out!
