Kefir is a fermented drink, traditionally made using cow's milk or goat's milk. It is made by adding kefir grains to milk. These are not cereal grains, but grain-like colonies of yeast and lactic acid bacteria that resemble a cauliflower in appearance. Over approximately 24 hours, the microorganisms in the kefir grains multiply and ferment the sugars in the milk, turning it into kefir, as previously noted. How is kefir made?
Kefir requires a starter material to undergo fermentation, the process where bacteria, yeasts, or other microorganisms break down glucose molecules (sugar). Kefir “grains” are the primary ingredient needed to make kefir. But these grains don’t come from cereals or pseudocereals.
Kefir grains include a mixture of yeast and bacteria that’s bound together with milk proteins and complex sugars called polysaccharides. The grains are added to milk and the mixture is set aside for 18 to 24 hours to ferment.
When the mixture is fermented, the kefir grains are removed from the liquid so they can be reused to make another batch. The leftover liquid is the kefir.
Traditionally, kefir uses a milk base but it can also be made using water. Water kefir is made using kefir grains with coconut water or plain water and added sugar instead of milk.
A one-cup serving of kefir contains the following nutrients:
- Calcium – 20 percent
- Calories – 104 Kcal
- Carbohydrates – 7 g
- Fat – 6 g
- Magnesium – 5 percent
- Phosphorus – 20 percent
- Protein – 6 g
- Riboflavin – 19 percent
- Vitamin B12 – 14 percent
